DK Cellars

Dave and Kim Pratt, who I’m guessing are the D and the K in DK Cellars, are on to something big. They came to downtown Placerville, not far from their Fair Play winery to showcase a few wines with superior quality and appropriate pairings. They were all exquisite!

You rarely see a 100% Semillon and theirs is the one that raised the bar. Slight sweetness makes it a great pairing for slightly spicy or slightly sweet dishes. As you all probably know, like people, opposites attract and sames attract when it comes to pairing wine with food. Simple yet profound!

But their Barbera will knock your socks off or at least make them go up and down. It starts with bright cherry but has a blanket of rich concentrated flavors that make your mouth water while they make you thirsty. The two elements working in conjunction give the inside of your mouth a velvet feeling. This is what wine enthusiasts call velvety and theirs is a momentous one to use as a gauge.
